Ok so after tests, it work with old spine editors version (the atlas file was not the good one).
Do you know when binary will work with 3.1 + spine editor? the problem is , animations made with 3.1+ seems not compatible with older version, so we cannot just use an old spine version.

Btw, do you know a way to do the skeletons loadings in another thread? In order to be able to play animated stuff during loading screen (not just a frozen picture for some seconds).
As unity is not thread safe, when trying to do the
SkeletonDataAsset.GetSkeletonData(false)
, there is tons of error. ( skeletondata initializers use Unity api).
